It’s September, and that means National Waffle Week is around the corner as the first full week kicks off the celebration. Now, you may be wondering what in the world waffles have to do with Mexican cuisine – well, that’s what we’re here for, to let you know!
Although most people don’t associate waffles with Mexican food, we’re here to shed the light. From breakfast to dinner, waffles are the perfect companion to any meal. All you need is a bit of imagination!
Mexican Cornbread Waffles
Just like you remember, waffles are an amazing breakfast treat. However, when it comes to Mexican cuisine, you’ll want to set aside the sugar and take out the cornmeal. This recipe combines traditional dry ingredients such as flour, baking soda, and baking powder with wet ingredients like eggs, butter, and milk to create a mouth-watering waffle like you’ve never experienced.

Churro Waffles
Alright, we got through breakfast, maybe worked out, had a snack, and we’re onto lunch. Although you may opt for a salad or sandwich, National Waffle Week calls for a bit more excitement (at least one day anyway). Enter the churro waffle.

Taco Stuffed Waffles
Okay, how do we not mention the taco? A staple to Mexican cuisine, Waffle Week if the perfect time to combine some of your favorite ingredients that you may not have otherwise thought of. For example, the waffle and taco – or how about a taco stuffed waffle? Yep, you read that right.
Beyond frosting has our attention with their recipe combining seasoned meat or beans into the waffle mix. Once cooked, they’re topping off the waffle stack with cheese, guacamole, and whatever else your taco calls for!
