Early Taco Fillings
Tacos have been around for centuries. In Mexico, corn tortillas have long been a way to hold ingredients together. Since ancient times, the indigenous people of Mexico have made what we would call tacos today, using whatever native ingredients they had on hand as the fillings. In coastal regions, fish was a common ingredient. Other proteins like beef or pork weren’t included until the arrival of Europeans because cattle and pigs are not native to the Americas.
Baja California, Mexico
It’s slightly confusing, but Baja California is actually in Mexico. Baja California is very close to what is now California, USA, so this point of geography matters because it’s how fish tacos became a popular choice in Mexican restaurants in the United States. In the 19th and 20th centuries, many people from Mexico migrated to the southwestern United States, especially southern California. They brought their culinary skills with them, and other residents began to appreciate the flavors of Mexican cuisine.
Fusion Cuisine
Today, nearly all Mexican food is a fusion of traditional Mexican flavors and techniques with ingredients from other regions and cultures. For example, flour tortillas are just as common as corn tortillas now, although corn is the traditional choice.
